The initiative connects each property directly with local farms and fisheries, ensuring that ingredients are sourced sustainably and used in their entirety. Menus change daily based on what is freshest and most seasonal, minimizing waste while maximizing flavor.
Key components of the program include root-to-stem cooking techniques, composting partnerships with local agricultural cooperatives, and AI-powered inventory management that predicts demand with precision.
